When life gives you lemons, make LIMONCELLO!
Lemons are considered the yellow gold of the Amalfi Coast and the limoncello the nectar that the gods gave to its inhabitants and visitors.
This is why we are happy to share the recipe with you!
800 g of sugar
1 l of alcohol
1.1 l of water
After washing and drying the lemons, cut the peel, being careful not to cut the white pulp. It would make the taste of limoncello sour.
At this point pour the alcohol and the skins into a jar and leave to infuse for 4/5 days. After this time, filter the infusion and set it aside.
Meanwhile, pour the water and sugar into a pan and bring it to a boil. Boil for about 20 minutes and then let it cool.
Tip: you can also boil the lemon peels to give an even more intense flavor.
When the mixture is cooled, pour the previously filtered alcohol in . Transfer to the bottles and wait at least a week before tasting your homemade limoncello.
Limoncello is meant to be sipped after a meal. Store the limoncello in the freezer and serve it in iced glasses. Savor it every time you want to remember the summer evenings on the Amalfi Coast.
